Healthy food consumption is determined by both the preferences of the consumer and the selection provided by retailers. While previous research has overwhelmingly centered on the former, this study takes a new approach in examining the producer. Using Mintel’s Global New Product Database (GNPD) information on food innovations, this paper analyzes macronutrient trends in private label food products released in the United Kingdom from 2005 to 2011.
